DR. CARRIE RUXTON'S TASTY RECIPES
GRATED CHEESE WITH APPLE AND RAISIN COLESLAW
Taste the difference
Make the filling by grating 30g of reduced fat cheddar cheese and mixing it with 25g grated apple, 20g grated carrot, 10g finely shredded white cabbage, 10g raisins and 20g Extra Light salad cream. Pile this between two slices of Nimble Malted Wholegrain.
The healthy fruit and vegetable mixture helps to add bulk and texture to the sandwich, reducing the desire to over-indulge in high fat coleslaw.
Including vegetables in sandwiches is a great way of getting closer to the five portions of fruit and veg we should be eating every day. Fruit and veg are also great sources of beneficial antioxidant flavonoids, such as quercetin, which help to protect against harmful free radicals.
