CHICKEN TIKKA WITH FRESH MANGO AND YOGHURT
Taste the difference
Mix together 10g of natural yoghurt with a couple of chopped, fresh mint leaves and a squeeze of lime juice. Spread onto a slice of Nimble High Fibre White and add 1 ½ pre-cooked fillets of sliced tikka chicken breast. This is available from supermarkets or could easily be made at home by marinating chicken breast fillets in tikka powder and baking in the oven. Top with 30g juicy mango slices and another slice of Nimble High Fibre White.
Mango is an excellent source of beta carotene - the reason mangoes have such a vibrant orange colour - and boosts the nutritional value of the sandwich. Substituting natural yoghurt for mayonnaise vastly reduces the fat and calorie content of the sandwich without compromising on taste.
