DR. CARRIE RUXTON'S TASTY RECIPES
EGG, SUN-DRIED TOMATOES AND WATERCRESS
Taste the difference
Chop one hard-boiled egg and10g sun-dried tomatoes and mix with 15g Extra Light Mayonnaise. If you use semi-dried tomatoes, they do not require any pre-soaking. Spread onto one slice of Nimble Malted Wholegrain and garnish with 15g crunchy watercress before topping with a final slice of Nimble Malted Wholegrain.
The watercress’ peppery flavour will add flavour to the sandwich reducing the need for creamy mayonnaise, whist the tomato will give texture.
Watercress contains carotenoids which can help boost the body’s immune system. Tomatoes contain lycopene and beta-carotene which are important for fighting free radical damage and preserving health and beauty.
