WAFER THIN-HAM & CHILLI ROASTED MEDITERRANEAN VEGETABLES
Taste the difference
For a satisfying sandwich, top two slices of Nimble Malted Wholegrain with 5g low fat spread and four slices of wafer-thin ham. Opting for wafer-thin ham rather than thick cut gives all the taste but without the extra fat and calories.
Then add 30g Mediterranean vegetables, such as peppers, aubergines and courgettes that have been oven roasted for 15 minutes with a few chilli flakes and a drop of olive oil. Season with black pepper. Alternatively, use roasted vegetables from antipasto ranges found in supermarkets and add chilli flakes to taste (just be sure to blot the vegetables in kitchen paper to remove the oil).
The vegetables provide antioxidant vitamin C and beta-carotene making this a far more nutritious option to the straightforward ham and mustard whilst still retaining a strong, hot taste. Using thinner ham also means that the sodium (salt) content of the sandwich is reduced.
